Pardon me for that slightly tongue-twister title.
I've been wanting to make these for, um, a few months now. When I made a few different recipes (which were delicious but for some reason I can't get the links to work), I (with some inspiration from Riley) came up with the idea of sort of melding them together to make these darling little pizzas.
Since I was unsure of which temperature and how long to bake them (one recipe was 350 for 25, the other 425 for 10, so I just kind of averaged it out. Note: learn from my mistake), they turned out
Interruption: I just looked down at my ring finger and my wedding ring (which I just got professionally cleaned this morning) has crusty dough all stuck in between the fused bands. Argh! Hopefully I can get it out.
Where was I? Oh yeah, dinner.

Well, without further ado, here they are! Don't they look so cute and tasty?
The Rosemary Spelt Cracker Recipe without the rosemary, modified by making balls with the dough and flattening them out to be mini pizza circles (about 3-4" across), instead of really thin crackers. Using a rolling pin didn't maintain the circular shape with so many on the pan so I just got them as thin as I could with my hands. Anyway...
Baked for 5 min at 385.
The Basil Pesto Recipe
Spread the pesto on top of each crust, with a tomato slice and mozzarella cheese sprinkled on top.
Baked for another 5 min.
Not done enough, put back in at 425 for 5 more min. A little improvement, still good but I'll try to figure out a better cook time/temp for next time.
That said, sometimes my kitchen creations turn out fabulous and sometimes they permanently damage my cookware, and sometimes (like tonight) they're good enough to try again with some changes.
